InBrief The Culinary Institute of America has expanded its program to feed the hungry of the Hudson Valley to three days a week from once a week. With 42 teaching kitchens and bakeshops on the CIA's Hyde Park, N.Y., campus, the site often produces more food than students can consume. In the past, food that wasn't served was compos- ted and sent to an organic farm. A few years ago, Professor Robert Perillo developed a program that would reduce food waste, help the commu- nity and educate students. To get the ball roll- ing, the college contacted the Food Bank of the Hudson Valley and developed a plan that ensures food safety. The program started small with food that could be frozen, like soups from the CIA's Culinary Fundamental Course. The program grew from there and last year the Food Bank of Hudson Valley picked up almost three tons of food from the CIA. This was enough for 4,870 meals.
