10 FOODSERVICE EQUIPMENT & SUPPLIES JULY 2019 QUICK BITES Inside Wild Ink at Hudson Yards | By Tom O'Brien | It's not uncommon for a head ofce to spec equipment for a restaurant that's miles away; chains often do it. But when the head ofce is on another continent, it can lead to some interesting equip- ment choices. Wild Ink, an Asian-inspired restau- rant, resides in the stylish new Hudson Yards residential/retail development in midtown Manhattan, which is among the largest private real estate develop- ments in the U.S. Besides traditional seafood and protein entrees, the 175- seat restaurant features a variety of menu items, including dim sum, small plates and raw dishes. Wild Ink showcases Asian-inspired cuisine. The open kitchen area serves as a primary cooking space for chefs.
